An oven baked roasted potatoes is an amazing dish for all those who love eating potatoes, especially French fries, Potato wedges etc. This is an excellent side dish made with olive oil and herbs. Roasted potatoes can also be eaten as a snack. Kids would ready love to nibble this down.

Oven baked roasted potatoes are fluffy inside and a crisp outer covering flavored with exotic and delicate essence of rosemary and garlic. These crispy potatoes are a perfect dish to any roast. This is one of the ideal recipes to make your kids and family delighted giving them healthy, fresh and yummy snack. Oven baked roasted potatoes are an excellent option as starters and a healthy substitute to Chips or French fries as it hardly consumes time and no messing work during the cooking etc.

Most of us obviously love eating the restaurant style potato wedges as they look very appealing and attractive. But we do not actually give a thought or realize on the preparation methods at all. However this recipe would surely help in taking an extra step in preparing the roasted potatoes at your home in the oven which is cooked in a healthy way and can enjoy the taste similar to the restaurant style. This also preserves the potato’s vitamin C, potassium and fiber health benefits. However, this does not mean that you must give up dining out completely. But making healthy, nutritious and fresh food at home is always a better option and can be served any time without putting much effort.

Potatoes, being one of the most adored food item by most, is one of the most controversial foods as most of the doctor’s or dieticians ask to avoid in the diet plan as they have high levels of carbohydrates. But on the other hand, potatoes are also considered an extremely healthy food, filling and moderate in calories.

Baking or roasting is considered as few healthy cooking methods as they involve reducing fat, cholesterol and sodium in the diet. There are numerous recipes that one can make with potatoes. Potatoes can be either just be cooked or fried on its own or mixed with other vegetables or non-vegetarian dishes. Potatoes taste very well when combined with eggplant (brinjal), cauliflower, French beans, mutton or chicken. For preparing the oven baked roasted potatoes, firstly wash and cut the potatoes into four halves. In a vessel put the potato halves and add some water, crush some fresh rosemary, few bay leaves, and 2 cloves of garlic, salt and let it boil well for about 5 minutes. The secret to the crusty potatoes is the pre-oven boiling in salted and seasoned water. Here the potatoes absorb the flavors and salt, but more importantly cooks the surface of the potato, which actually forms the great crunchy texture in the oven.

Once done, drain the water and air dry the potatoes well. Coat them well with some olive oil, pepper and salt and mix well. Place the potatoes pieces in a baking tray and roast in the oven at 375 degrees for about 35 minutes or until they turn golden brown and crunchy. By the way, it’s very important to let the potatoes really dry well before coating them with oil. This will ensure a great crusty skin. Potatoes are rich sources of vitamins, especially Vitamin C and B-complex. Vitamin C may prevent the scurvy, cracked lip corners, spongy and bleeding gums, and prevent frequent infections. Water obtained from boiling potatoes is an extraordinary natural remedy that gives a relief to people suffering from rheumatism. The potato skin is a concentrated source of dietary fiber, so to get the most nutritional value from this vegetable, don’t peel it and consume both the flesh and the skin.
