It is an un-aged, acid-set, non melting farmer cheese made by curdling heated milk with lemon juice or food acid and easy to prepare at home. Tomato gravy or sauce, which is distinct from the term as used by northeastern Italian Americans when referring to tomato sauce, is a sauce common in some rural areas of the United States, particularly where tomatoes were a staple food. Tomato gravy is prepared using the similar method to white gravy. The cooked tomatoes, some fat and flour are cooked together until thick, and seasoned with salt and pepper. Typically, tomato gravy is served over eggs, toast and biscuits. Perhaps the tomato sauce or gravy is best known as sauces for pasta dishes. To prepare the yummy paneer in spicy tomato sauce, cut four ripe tomatoes and grind it with garlic in the mixer. Roast cumin and coriander seeds till you get nice aroma and then grind to fresh powder and keep aside. In a heavy bottom pan heat little oil and fry the paneer cubes till lightly brown. Keep the paneer aside and in the same oil add the tomato and garlic paste and stir well. Cook till the raw flavors of the tomatoes and garlic are gone. When it boils add the fried paneer and let it cook till done. Before taking out from fire sprinkle the fresh ground dry masala powder and mix. Garnish with lots of freshly chopped coriander leaves and serve with hot chapattis, roti or naan.
