The shrimp coconut masala is a dry fry curry with not much gravy and each shrimp nicely coated with the masala flavor of coconut. The secret of this recipe is the delicate cooking and the mild flavors of the onions, coconut, green chillies and spices to make it a scrumptious curry.
 
 This recipe a lightly pan fried dish with less fat and is nutritious too. Sometimes the simplest of recipe with mild flavor make a wonderful dish. The shrimp coconut masala is one such recipe that has the serenity of the natural fresh shrimp. This dish is an exotic dish best served as an appetizer or snack or even as a side dish with rice.
 
 A great combination of flavors here! This tasty shrimp dish flavored with garlic and ginger is not only low-fat, but also low in calories. The masala spiced with curry leaves and fresh pepper powder. The shrimp coconut masala fry is a spicy dish, but feel free to reduce the spiciness to suit your own personal tastes. To prepare this luscious shrimp coconut masala fry, clean the shrimp (remove the tail, head and devein). Chop onion and green chillies finely. Heat a wide open non stick pan. When hot, add mustard seeds. When Mustard seed splutters add cumin seeds & red chillies. Fry for 10 sec. Add chopped onion, coconut powder and saute well .
 
Add green chillies, salt, curry leaves saute well on medium flame. Add ginger garlic paste, turmeric powder, coriander powder, yogurt, red chili powder. Mix well till the mixture dries and oil separates. Drain the water thoroughly from the shrimps & add the shrimp to the masala. Mix well & cook slowly till the water from shrimp has been evaporated and the mixture is dried.
 
 Sprinkle some pepper powder and Garnish it with chopped coriander leaves & lemon juice. Do not add water as the water from shrimps is enough to cook the dish. Do not add much onions or coconut powder as this is a very delicately cooked shrimp curry where the shrimps just need to be coated well with the subtle masalas. This simple and delectable seafood homemade Shrimp coconut masala fry really brings out the flavors nicely and keeps the shrimps tasty and juicy. Directions | How to make Shrimp-Coconut Masala

1. Put oil in a wide open non stick pan.Add red chillies & mustard seeds to it till they crackle.Add cumin seeds ,chopped onion & coconut powder .Saute well . [Note:-Avoid frying onions till they are golden brown] 2. Add green chillies,salt,curry leaves & saute well on medium flame.Add ginger garlic paste ,turmeric powder,coriander powder,curd,red chilli powder & mix well till the mixture dries. 3. Strain excess water & add shrimp to the masala prepared .Mix well & cook slowly till the water from shrimp has oozed out & mixture has dried. 4.Sprinkle pepper powder as seasoning . 5.Garnish it with chopped coriander leaves & lemon juice.
