Sukha Aloo, sukha mean dry fry and aloo is potato. Aloo or potato is one of the most favorite vegetable of all especially the kids. Sukha Aloo is an important dish on the Navaratri festival platter and this dish is popular with people of all age groups. It’s a very simple recipe easy to prepare and a very delicious dish to be eaten.
 
The potato was first introduced in the Philippines during the late 16th century and China during the 17th century; it was well established as a crop in India by the late 18th century and in Africa by the mid 20th century. Potatoes are an important food source. They are the most widely cultivated vegetable in the world. An average-sized potato weighing between 6 and 8 ounces contains less than 100 calories.
 
Potatoes consist of about 80 percent water, 20 percent solid matter, and have a high nutritional value. Starch makes up about 85 percent of this solid mass and the rest is protein. Potatoes also provide vitamins including niacin, riboflavin, thiamin, and vitamin C. They also contain minerals such as calcium, iron, magnesium, phosphorus, potassium, sodium, and sulfur.
 
The potato contains vitamins and minerals, as well as an assortment of phytochemicals, such as carotenoids and polyphenols. The fiber content of a potato with skin (2 g) is equivalent to that of many whole grain breads, pastas, and cereals. According to nutritionist, the potato is best known for its carbohydrate content (approximately 26 grams in a medium potato).
 
The predominant form of this carbohydrate is starch. A small but significant portion of this starch is resistant to digestion by enzymes in the stomach and small intestine, and so reaches the large intestine essentially intact. Preparing the Sukha Aloo is quite simple and fast to prepare. In a pan add butter, cumin seeds, onion, salt, chopped garlic, sliced ginger, chopped green chillies, turmeric, mix well and then add curry leaves, finely chopped coriander leaves cook for few min , add cumin powder, coriander powder, chilli powder mix well, lastly add boiled sliced potatoes and mix well. Fry the potatoes till they are slight golden brown colour.
 
The aroma and fragrance that are released from the fresh ginger, garlic and curry leaves of the fried potatoes just spread the whole house and really tempting to eat the most liked scrumptious dish. If you love potato you will definitely like the spicy potato fry. It’s great with steaming rice and rasam or any Indian flat bread. It is said to be good for high blood pressure and for hyper acidity patient.
 
Potato is also good for the skin and beauticians use potato for making a good face mask. One of the best homemade face packs is: (1 tablespoon of grated potato and 1 Table spoon of curd mix well and apply it to the face and leave it to dry and wash it). Its ideal to make your skin looks bright and very refreshing.

  2. chilli powder - 0 -as per taste
  3. coriander leaves - 1 - bunch
  4. coriander powder - 1/4 - tsp
  5. cumin powder - 1/4 - tsp
  6. cumin seeds - 0 - pinch
  7. curry leaves - 1 - bunch
  8. garlic - 5 - number
  9. ginger - 1-number
  10. green chillis -4 -number
  11. onion sliced - 1 - number
  12. potato boiled -2 - number
  13. salt - 0 - as needed
  14. turmuric - 1/4 -tsp

Instructions:

  1. In a pan add butter, cumin seeds, onion,salt, garlic,ginger, green chillies, turmuric, mix well then add curry leaves, coriander leaves chopped cook for few min ,then add cumin powder, coriander powder, chilli powder mix well, then add boiled potatos sliced mix well cook till potatos are slight golden brown colour
