TOMATO SAUCE

Every thing about TOMATO SAUCE | Vahrehvah :

Tomato sauce is an excellent dish made with fresh and juicy tomatoes. Tomato sauce is one of the popular sauces among all and usually served as part of a dish or condiment or dips. Tomato sauces are common for meat and vegetables and best known as sauces for pasta dishes.

Tomatoes have a rich flavor, high liquid content, very soft flesh which breaks down easily, and the right composition to thicken into a sauce when they are cooked (without the need of thickeners like roux). All of these qualities make them ideal for simple and appealing sauces.

The simplest tomato sauces consist just of chopped tomato flesh (with the skins and seeds optionally removed), cooked in a little olive oil and simmered until it loses its raw flavor, and seasoned with salt. Sometimes water (or another, more flavorful liquid such as stock or wine) is added to keep it from drying out too much.

Onion and garlic are almost always sweated or sautéed at the beginning before the tomato is added. There are many ways of preparing tomato sauces. A basic recipe of tomato-based sauce contains tomato puree, diced tomatoes, and bell peppers (red, yellow, and green) with the seeds included.

It is seasoned with fresh garlic, basil, oregano, paprika, cajun seasoning, crushed red pepper, parsley, olive oil, and possibly some additional seasonings. In most of the U.S., "tomato sauce" refers to a tomato concentrate with salt, herbs and small amounts of spices and often flavored with meat or seafood. It is sold in bottles and cans.

This product is considered incomplete and not normally used as it is. Instead, it is used as a base for almost any food which needs a lot of tomato flavor. In countries such as Australia and New Zealand, in southern Africa and the United Kingdom the term 'tomato sauce' is used to describe a condiment similar to that known in the USA as 'ketchup'.

In Britain, both terms are used for the condiment. The use of tomato sauce with pasta appears for the first time in the Italian cookbook L'Apicio moderno, by Roman chef Francesco Leonardi, edited in 1790. Generally long simmered tomato sauce is very delicious to taste and can be eaten anytime in the year.

Extended cooking usually thickens the sauce as the water cooks off and long simmering melds flavors together. Any other vegetables you add to the sauce will become richer and sweeter the longer they cook. Tomatoes are acidic and are used in making tomato sauce, ketchup or tomato soup.

Tomatoes are extensively used in Mediterranean cuisine especially Italian and Middle Eastern cuisines. Tomatoes are the key ingredient in pizza and are commonly used in pasta sauces. They are also used in gazpacho (Spanish cuisine) and pa amb tomàquet (Catalan cuisine).
