Ingredients used in INSTANT DHOKLA
• Chickpea flour - 1 cup.
• Semolina - 1 tablespoon.
• Asafoetida - pinch.
• Turmeric powder - 1/2 tea spoon.
• Green chili paste - 1 tea spoon.
• Salt - to taste.
• Yogurt - 2 teaspoons.
• Oil - as required.
• Lime juice - 5 tablespoons.
• Baking soda - 1/2 tablespoon.
• Baking powder - 1 tablespoon.
• Mustard seeds - 1 tea spoon.
• Green chilies - 2 number.
• Curry leaves finely chopped - 1 spring.
• Sugar - 1 tea spoon.
• Coriander leaves(chopped) - 1/4 cup.
• Coconut slices(1 inch) - 10 numbers.
• Water - as required.
Method:
  • Take a bowl, add chickpea flour, semolina, asafoetida, turmeric powder, green chili paste, salt, yogurt, 2 tablespoon of oil, little water and mix thoroughly.
  • Add 3 tablespoons of lime juice and mix thoroughly like the dosa batter.
  • Add baking soda, baking powder and mix thoroughly.
  • Immediately pour the mixture into a bread mould and place it in the steamer and steam for 10-15 minutes.
  • Heat 2 tablespoons of oil in the pan, add mustard seeds, chopped green chilies and curry leaves, 1 teaspoon of sugar, 1/4 cup of water, salt,let it boil until the sugar dissolves and switch of the flame.
  • Add lime juice and pour this mixture on the steamed dhokla.
  • Transfer it into a plate and cut into pieces.
  • Now garnish with coriander leaves, coconut slice and serve it.

Rice and chana dal, in the specific proportion are soaked overnight. The mix is ground, and also the paste is fermented for 4 to 5 hrs. or overnight. It is spiced with the help of chili pepper, Coriander, ginger and baking soda.

The fermented mixture will then be steamed for 15 minutes on plates positioned in the container that doesn't allow steam to flee. The plates are straight not put on the bottom, or even the mixture will burn, so a little stand is used. Once the batter is steamed appropriately, the plates are removed from the container and cut into portions. These sliced pieces are tempered in hot oil with mustard seeds. Asafetida and sliced green chilies may also be fried and, often, the same quantity of water along with a little sugar is included in this oil. The portions are then taken out of dish. Lots of people also fried it in hot oil with cumin seeds.

 It's usually offered with deep-fried chilies and coriander chutney. It's garnished with cilantro and quite often with grated coconut.

 There are fundamentally two variations of dhokla: One made out of Besan as well as other from Chana Dal. This is called Khaman, not Dhokla. Dhokla doesnt contain gram flour and Sugar. Totally different recipe and taste.?
