LAUKI KHEER WITH CUSTARD

Ingredients used in LAUKI KHEER WITH CUSTARD
• Bottle gourd - 1 number.
• Chironji - 1 tablespoon.
• Cashew nuts - 10 numbers.
• Milk - 2 cups.
• Sugar - 1/2 cup.
• Custard powder - 1-2 tablespoons.
• Chia seeds - 1 tablespoon.
• Ghee - 2 tablespoons.
Method:
  • Peel the bottle gourd and grate it.
  • Add custard powder in little milk and mix thoroughly without any lumps.
  • Heat ghee in a pan and add chironji, cashew nut and saute it and remove little quantity into a plate for garnish.
  • In the same pan add grated bottle gourd and saute it for 1 minute.
  • Add little water and cook it for 2 minutes by placing the lid on it.
  • Add sugar, milk and boil it.
  • When the milk starts boiling add custard mixture and mix thoroughly.
  • When the mixture thicken switch off the flame and add chia seeds soaked in water for 10 minutes.
  • Now the lauki kheer is ready to serve or you can keep in the refrigerator and serve it cool.
