Recipe of Mexican Tomato Rice with Beans

Cumin Powder 1 Teaspoons
Tomato Puree 1 Cup
Salt To Taste
Pepper Crushed 5 Numbers
Onion Chopped 2 Numbers
Garlic Crushed 1 Tablespoons
Bay Leaf 2 Numbers
Olive Oil 2 Tablespoons
Water 1 3/4 Cup
Rice 1 Cup
Stock 2 Cup
Red & Green Bell Pepper 1 Numbers
Pinto Or Kidney Beans 100 Grams


Heat olive oil in a pan add bay leaf, crushed garlic, chopped onions, sauté the onions and garlic, add crush pepper, salt, tomato puree, cumin powder, oregano (optional) once it comes to boil, add boiled beans and add vegetable stock, when it boils add soaked rice, cook till almost done, garnish with sautéed red & green bell pepper.
