Description: Mix Vegetable poriyal is mix of all vegetables cooked and tossed with freshly grated coconut. It is also known as porial/dry curry/koora/sabji and goes well accompanied with rice as a side dish and also with any type of chapathis/parathas/rotis.

Recipe of Mix - Vegetable Poriyal

Chopped Coriander 1 Springs
Carrots 200 Grams
Beans 200 Grams
Curry Leaves 1 Springs
Fresh Grated Coconut
Green Chillies 1 Teaspoons
Hing 1 Pinch
Urad Dal 1 Teaspoons
Turmeric Powder 1 Teaspoons
Salt 1 To Taste
Red Chilli 3 Piece
Onions 2 Numbers
Mustard Seeds 1 Teaspoons
Cashew Nuts 2 Tablespoons
Cumin 1 Teaspoons
Oil 1 Tablespoons
Channadal Split Bengal Gram 1 Tablespoons

Directions

  1. • Wash carrots and beans properly.  and boil till hald done (optional  you can cook directly just cut them small
  2. heat oil add mustard ,red chilli,cumin channadal cashew urad dal • add hing • Add  turmeric powder, onion chopped chiliies curry leaves and salt. • add vegetables saute till theyare cooked. •   •
  3.  add grated coconut • Saute it well. • serve hot  • with rice or pulkha
