Mutton Sambhar is a wonderful meat curry, yummy, possessing exceptional tastes of their own, not very spicy. This Sambhar has a superb blend of whole spices.

Tips for Cooking Mutton:

  • Most mutton curries need slow cooking on low heat to maintain its wetness, juices and tenderness. Meat need to very first cooked above high temperature to seal juices after which cooked until soft on low heat.
  • Don't include salt to the meat prior to cooking it. Salt pushes the juices out and prevents browning. You need to add salt midway through cooking.

Ingredients used in Mutton Sambhar
• Mutton - 350 grams.
• Chana dal(soaked) - 1/2 cup.
• Masoor dal - 1/2 cup.
• Salt - to taste.
• Turmeric powder - 1/2 tea spoon.
• Oil - 4 tablespoons.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Cloves - 2 numbers.
• Cinnamon - 1 number.
• Dry red chillies - 2 numbers.
• Green chillies - 2 numbers.
• Onions - 1 number.
• Ginger garlic paste - 1/2 tea spoon.
• Curry leaves - 1 springs.
• Red chili powder - 1 tea spoon.
• Coconut powder - 1/2 tea spoon.
• Tamarind juice - 1 cup.
• Tomato - 2 numbers.
• Coriander leaves(chopped) - 1 tablespoon.
• Water - as required.
Method:
  • Take a pan and add mutton, chana dal, masoor dal, little water, salt, turmeric powder and mix nicely, later transfer into the pressure cooker and cook for 3-4 whistle.
  • Heat oil in a pan and add mustard seeds, cumin seeds, cloves, cinnamon stick and saute it.
  • Add dry red chilies, green chillies, onions, little salt, ginger garlic paste, curry leaves and saute it.
  • To it add turmeric powder, red chili powder, desiccated coconut powder, tamarind juice and allow it boil.
  • Add pressure cooked mutton mixture and mix nicely, check for seasoning later add tomato, a little salt, little water and boil for 3-4 minutes.
  • At last add coriander leaves and switch off the flame.

Now Mutton Sambhar is ready to serve.

this dish is also called mutton dalcha and is made with a leafy veg called ambatchuka in place of tamarind.it tastes yumm with boiled rice slightly fried in ghee?
