Wash amaranth leaves keep it a side.
Take a pan add oil red chilly dry,murstard,fenugreek,jeera seeds, now add garlic, turmuric, onions, hing, salt, add the amaranth leaves ,curry leaves cook till the leaves are cooking 90%.
Now add tamarind juice, jaggary cook for 5min then add Roasted peanuts powder mix well cook for 2-3min and serve with roti or rice.
