PUMPKIN CHUTNEY

Ingredients used in PUMPKIN CHUTNEY
• Mustard seeds - 1/4 tea spoon.
• Fenugreek seeds - 1 pinch.
• Oil - 1 tablespoon.
• Yellow pumpkin (finely chopped) - 1 cup.
• Green chillies - 8 numbers.
• Coriander leaves - 1/4 bunch.
• Salt - to taste.
• Yogurt - 1/2 cup.
• Fresh coconut (grated) - (1-2) tablespoons.
Method:
  • Dry roast mustard seeds, fenugreek seeds in a pan. Later transfer itinto ablender and blend it once.
  • Heat oil in the same pan, add yellow pumpkin, green chilies, coriander leaves and saute for 2 minutes, later transfer to ablender and blended into coarse paste by adding salt.
  • Take a bowl and add yogurt, earlier coarse paste, coconut and mix nicely.
  • Check for seasoning and if required add salt.

Now pumpkin chutney is ready to serve with biryani.
