Ingredients used in quick - veg cutlets
• Corn flour - 1/2 cup.
• Chopped & boiled vegetables - carrot, beans, green chillies, corn, peas - 1 cup.
• Potatoes - boiled/baked & peeled - 2 big.
• Rava(suji) or bread crumbs - 1 cup.
Method:
bake/boil potatoes, peel amp; mash them well boil veg - carrots, green peas, sweet corn kernels amp; beans all chopped into small pieces.. smash these too and mix them with mashed potatoes. Now add - salt amp; red chilli powder and mix well the potatoes and veg. amp; if you like spicy - chop green chillies finely and add. Add half -to- one tb spoon corn flour for binding amp; as well crispiness.Mix all together well. Now silmply roll them in finger shaped cylinders with hand. Next roll these cutlets in rava(suji) or bread crumbs - I prefer rava because.. its readily available at home and compared to bread crumbs rava absorbs less oil. Once we roll these cutlets nicely in rava all over, deep fry them till golden brown or little more darker. Use kitchen towels to absorb the excess oil out of cutlets.
