Ingredients used in Brown Rice indian
• Basmati rice (soak the rice 30 minutes) - 1 cup.
• Whole garam masala (each) - 2 grams.
• Peppercorns - 1/2 tea spoon.
• Bay leaves - 3 numbers.
• Onion - 1 number.
• Salt - to taste.
• Sugar - 1-1/2 tea spoon.
• Water - 2 cups.
• Oil - 2 tablespoons.
Method:
  • Heat oil in a pan add whole garam masala, peppercorns, bay leaves, onion slices, salt, cook the onions till it is brown in color.
  • Add sugar lightly caramelize it & mix it well, add water, to the boiling water add Basmati Rice put the lid on and let it cook for 5 minutes.
  • Then mix it once and again put the lid on and let it cook for some time in a slow flame and switch off the flame.
  • Rest it for 5 minute then serve it.

Chef, I've made this pulao always but with a slight variation, I'd like to share. I put raisins and cashew nuts after browning onions. Then add washed rice and fry a bit before adding water.
