Coriander and Besan Curry is a famous dish in Rajasthani cuisines and it is generally prepared when there is scarcity of vegetable in the region. It is often served with rice and roti.

Coriander leaves are known as Cilantro and also called dhania patta, kotmir, kothamalli or kothmira in various Indian languages. Being fresh greens, a number of dishes can be prepared letting out its natural green color to the dish. It is widely used throughout Asia, India, North Africa and in Latin America where it is an integral ingredient in fresh salsas and sauces.

CORIANDER AND BESAN CURRY

Ingredients used in CORIANDER AND BESAN CURRY
• Oil - 2 tablespoons.
• Cumin seeds - half tea spoon.
• Mustard seeds - half tea spoon.
• Garlic (crushed) - 6 cloves.
• Curry leaves - 1 spring.
• Green chillies ( chopped) - half tea spoon.
• Chana dal - half tea spoon.
• Urad dal - half tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Coriander leaves - 2 bunch.
• Salt - to taste.
• Chickpea flour - 1-2 teaspoons.
• Red chilli powder - half tea spoon.
• Lime juice - half tea spoon.
Method:
  • Heat oil in a pan, add cumin seeds, mustard seeds, crushed garlic, curry leaves, green chillies, chana dal, urad dal and saute it till dal turns into light brown in color.
  • Then add turmeric powder, coriander leaves, salt and cook it for 1-2 minutes.
  • Add chickpea flour, red chilli powder to the above pan and saute it until curry turns to a dry consistency.
  • Switch off flame, add lime juice and mix nicely.

Now coriander and besan curry is ready to serve.
