Description: I always wondered how the dosas in the restaurants have a very good texture and color, at the same time soft and crisp too. Tried my grandmother's recipe and dosas came out real good.

Recipe of Restaurant style Dosa

Ingredient Name Quantity Unit
Toor Dal (yellow Lentils) Handful
Puffed Rice 2 Handful
Methi Seeds (fenugreek Seeds) 2 Teaspoons
Rice 4 Cup
Uradh Dal ( White Lentils) 1 Cup
Salt - To Taste
Sugar 1 Tablespoons
Bombay Rava Handful

Directions

DOSA BATTER : 1) Soak Urad Dal , Rice , Methi and a handful of toor dal for 7- 8 hours. Add 2 handful of puffed rice while grinding. This will make the dosas fluffy and porous 2) Leave aside the batter for 4-5 hours for fermentation after adding salt as per taste. 3)After fermentation, add 1 spoon of sugar and a handful of Bombay rava and then start making dosas If the batter is too thick u can add little water and use.Later on u can keep this batter in the fridge and use. Try making masala dosas with a dot of butter on top of it :)
