Ingredients used in Ridge Gourd And Egg Curry
• Ridge gourd (cubes) - 1 cup.
• Oil - 1 tablespoons.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Onions (chopped) - 1 cup.
• Salt - to taste.
• Green chillies - 2 numbers.
• Curry leaves - 1 springs.
• Ginger garlic (paste) - 1/2 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Coriander powder - 1/4 tea spoon.
• Coconut milk - 1 cup.
• Water - 1/2 cup.
• Boiled eggs - 2 numbers.
• Coriander leaves - 1/4 bunch.
Method:
  • Heat oil in a pan, add mustard seeds, cumin seeds, onions, little salt, green chillies, curry leaves and saute it.
  • Add ginger garlic paste, turmeric powder and cook it for one minute.
  • Then add ridge gourd, coriander powder, little salt and saute it, cook for 4 minutes with lid on it. Now add coconut milk, water and mix it.
  • Cut boiled egg into pieces and add to ridge gourd mixture and cook for 4 minutes cook it.
  • At last check for seasoning and transfer into a serving bowl, garnish with coriander leaves and mix it.

Now ridge gourd and egg curry is ready to serve with roti.
