Description : A delicious sweet dish made from rice flour and jaggery, usually made on navarathri friday in south indian homes.

Directions | How to make Rife Flour Puttu
 
1. Dry roast the rice fluor in a kadaiuntil it gives out a nice aroma and becomes slightly brown in colour. 2. Transfer it to a bowl and add a pinch of salt and turmeric powder. Mix them well. 3. Sprinkle water into this mixture, little by little and mix it well. It should reach a consistency such that it becomes a dumpling when pressed with hands, but disintegrates into a powder when crushed. 4. Now the mixture has to be steamed. Take a plate with holes and line it with a tissue paper. Put the rice flour mixture onto the plate. Put it into the idli cooker or any other vessel such that it sits above the level of boiling water. Now steam the rice flour for 15 to 20 mins till it feels really soft to touch. 5. Now put the ssteamed mixture into the bowl and allow it to cool. Mix it softly with hands to crush the small balls that may have formed. 6. Cut the cashew into small pieces and fry them in little ghee/oil until golden brown. 7. Take the jaggery in the kadai and add very little water, just enough to immerse the jaggery. Bring it to a boil, stirring continuously till it becomes slightly thick. 8. Add the steamed rice flour into the jaggery syrup and mix it well until all the jaggery is mixed well with the flour and the powder becomes very smooth with no lumps. 9. Stir in the cashews and mix well. Serve it Hot / Cold. It tastes good either way!!
