Description: ita a pure hyderabadi dish made with meat which goes xcellent with daal rice
Recipe of shaami shikampoor
mix all the first 8 ingredients (ie from mutton to chillies) and put in the cooker for half an hour with water till the meat is tender.remember we should not take minced meat for this recipe.and we should nt add much oil and even ginger as the shaami will break.then open the cooker and saute the meat till all the moist is gone.then cool the mixture and grind it with some green chillies,coriander.pudina,lemon and little raw meat(this will avoid the shaami to break while frying)and if u want u can add crushed onion.now roll it into oval shape but flat and shallow fry till it is brown.the oval ones are called shaami and to make shikampur ,make it round and stuff very little yoghurt with chopped onion and chopped coriander ,pdina and green chillies.and maked it flat like cutlates.dont dip in egg or bread crumbs or cornflour for frying.
dont add garlic or red chilli.and add raw meat while grinding the mixture.
