Recipe of Sour and Spicy Mushroom Soup

Ingredient Name Quantity Unit
Straw Mushrooms 1 Lbs
Water 3 Cup
Lemongrass Stalk 1 Numbers
Fresh Galangal 2-3 Slice
Kaffir Lime Leaves, Torn 3 Numbers
Thin (light) Soy Sauce 3 Tablespoons
Lime Juice 3 Tablespoons
Whole Dried Chile Peppers (or Fresh Chiles) 10 Numbers
Spring Onion (chopped) 1 Numbers

Directions

Clean the mushrooms, and cut any large ones in half. Bring the water to a boil, add the galaga, lemongrass, lime leaves and mushrooms. Cook until the mushrooms are tender, then add the soy sauce and remove from heat. Add the lime juice, chile peppers, and sprinkle with spring onion. Serve hot with jasmine rice.
