Recipe of stuffed brinjals

chilli powder	tsp	1
coriander powder	tsp	1
cumin seed	tsp	1/2
curd	cup	1/4
garam masala	tsp	1
ginger garlic paste	tsp	1
grated fresh coconut	tbsp	3
medium onions ,finely chopped	0	3
mustard seeds	tsp	1/2
oil	tbsp	3
roasted peanuts powdered coarsely	tbsp	3
small,round,firm brinjals	number	8 to 10
sugar	tsp	11/2
Directions \| How to make Stuffed Brinjals

Wash and clean brinjals. Make 2 slits to form a cross.Leave the stalks intact.Drop them immediately in cold,salt water.Mix the onions,coconut,all dry masalas,curd,ginger- garlic paste well and make a smooth filling.Stuff some of this mixture into each slit of the brinjals.Heat oil add mustard seeds,cumin seeds&wait to splutter,slide in the brinjals slowly.Cover with remaining mixture.Add 2cups of water.Simmer on low flame and cover until done.Stir once or twice in between.Cook till brinjals are tender to touch.
