Description : Tapioca(known as Yuca root in USA) is a staple food in kerala.Tapioca and fish curry could be considered official food of Kerala.Tapioca fry is popular among both vegetarians and non-vegetarians.

Directions | How to make Tapioca Yuca Root Fry
 
Remove the dark outer skin of tapioca and cut it into small cubes.Cook tapioca pieces along with salt and turmeric powder in a pressure cooker with enough water.cook until tapioca pieces are soft when pierced with a fork.Allow it to cool and drain the excess water. Heat oil in a pan and splutter mustard seeds.Add red chillies and saute.Now add crushed garlic pods and saute till it turns brown and a nice smell is released.Now add shallots and green chillies and fry till it turns slightly brown. Add curry leaves and saute .Now add the cooked tapioca pieces into this mixture and mix and mash well.Do a taste test here and add extra salt if required.Keep it on a low frame till its mixed well.Remove and serve hot.
Serving Ideas
It goes well with fish curry (for non veg) or onion chutney / tomato chutney as a main dish.Can also be served as a side dish with dosa/rice.
