Description : this is easy to make and yummy to eat with rice and ghee .Andhra style . I cook when none is there in my family ,good for bachelors and married bachelors .( wife gone home types)

Directions | How to make Vankai Vepatum
 
Take the oil in frying pan and add red chillies and onions (chopped)to it ,keep moving them not making the onions red . Now longitudinally slice the brinjals (vankai ) in a bowl of water as they get brown quickly . Keep adding all the brinjals with a bit of water ( sprinkling only ) so that you get steam to soften the mixture .Add salt to the mixture.Keep the lid on the mixture and keep turning it so that u do not burn it . 20 mins u get a vankai vepatum . the strong smell is unmistakable .
