In a kadai put some oil, and add ginger and fry it then add jeera, dhaniya and stir them then add dhaniya leaf and stir it then add green mirchi and red mirchi and let it fry and then add tomato n egg plant and fry them till the eggplant cooks well... put the entire process in low flame as we don't add water to it it gets sticked to the bottom... after that let it cool and blend it well and put a tadka...
