Recipe of vazhai poo vadai
|Channa Dhal Flour||1/2||Cup|
|Peeled And Cut Vazhai Poo||2||Cup|
|Vegetable Oil||To Fry|
Soak about 3 cups of channa dhal for atleast 3 hours. Drain away the water and put the dhal into food processor to grind. Very important --> No water in the dhal when grinding. Add red chillis as much as 3 to 4 cloves as per your spice req. Add 2 tbsp of cumin seeds(Jeera) to the dhal and grind the dhal. it should not be too soft. grind it into a coarse mixture. You can also add coriander seeds to the dhal if you want.Anyway thats not mandatory. Add salt,hing,curry leaves, chopped banana flower,chopped onions,grated ginger,grated garlic to the dhal mixture and mix it well. Add little bit of rice flour to the mixture to give the crisp texture. make balls of mixture, tap them in between your palm and drop them gently in a hot frying oil pan. Fry it till it becomes golden brown on both the sides. Remove it , drain the excess oil and serve it hot with mint chutney or coriander leaf chutney.
Rice flour is for the crispy taste. it keeps the vada crisp for a long time..
