Ingredients used in ACHARI BAINGAN
• Slender eggplant - 250 grams.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Fenugreek seeds - 1/4 tea spoon.
• Cloves - 4 numbers.
• Cinnamon - 1 stick.
• Onion seeds - 1/2 tea spoon.
• Fennel seeds - 1/2 tea spoon.
• Oil - 2 tablespoons.
• Onions (chopped) - 1 cup.
• Salt - to taste.
• Ginger garlic paste - 1 tablespoon.
• Turmeric powder - 1/4 tea spoon.
• Red chili powder - 1 tea spoon.
• Amchur powder - 1/2 tea spoon.
• Tomato puree - 1 cup.
• Lime juice - 1 tablespoon.
• Ginger (chopped) - 1/2 tea spoon.
• Coriander leaves (chopped) - 1 tablespoon.
Method:
  • Cut slender eggplant into long and medium-size slices.
  • Take a pan, add mustard seeds, cumin seeds, fenugreek seeds, cloves, cinnamon stick, onion seeds, fennel seeds and dry roast it, later transfer into mixie jar to make a fine powder.
  • Heat oil in a pan, add onions, a little salt, ginger garlic paste, turmeric powder and saute it.
  • To it, add red chili powder, amchur powder, tomato puree, eggplant and cook it.
  • Then add achari masala to it and mix nicely
  • At last add lime juice, ginger, coriander leaves and mix nicely.

Now achari baingan is ready to serve with roti or rice.
