Ingredients used in ALU GOBI KI TAHARI
• Fried onions - 1/2 cup.
• Yogurt - 1/2 cup.
• Chilly powder - 1 tea spoon.
• Kasoori methi - 1 tea spoon.
• Whole garam masala (all) - 2 numbers.
• Coriander powder - 1/2 tea spoon.
• Cumin powder - 1 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Ginger garlic paste - 1 tablespoon.
• Salt - to taste.
• Green chilly - 3 numbers.
• Green peas - 1/2 cup.
• Cauliflower florets - 250 grams.
• Potato - 250 grams.
• Water - 5 cups.
• Rice - 3 cups.
• Ghee - 1 tablespoon.
• Shahi jeera - 1 teaspoons.
• Onion - 1 number.
• Mint (chopped) - 1/2 bunch.
• Coriander (chopped) - 1/2 bunch.
• Oil - 2 tablespoons.
• Bay leaf - 2 numbers.
Method:
  • Heat oil in a big pan and add whole garam masala, bay leaf, shahi jeera, onions, saute onions for 1 minute.
  • Add turmeric powder, ginger garlic paste, salt, reduce the flame and add green chilly, cumin powder, coriander powder, chilly powder, add yogurt, chopped mint, chopped coriander, potatoes, dried kasoori methi, lid on and cook for some time.
  • Add water, cauliflower, green peas, and rice (soak the rice for 1 hour) put the lid on and cook for this first 5 minutes put high flame and then put it on a low flame.
  • Add some ghee, fried onions put the lid on, and switch off the flame.

We call vegetable briyani in Mauritius. We also add long cut carrot not shredded fresh bean cabbage and it is serve in Hindu wedding. Looks yum chef thanks.
