Ingredients used in Badaam Burfi
• Milk - 3 cup.
• Sugar - 500 grams.
• Almonds - 500 grams.
• Ghee - 8 tablespoons.
Method:
Soak almonds in boiling hot water for 5 mins. Drain the water and let it cool. Now its easy to peel the almonds. Alternatively, you can use peeled almonds readily available in the market. Blend the almonds with milk to get a fine/medium coarse paste. Measure the paste and add it to a pan. Add the same amount of sugar to the pan. Keep on high flame and stir continuosly. Be careful as the mixture may splatter. When the moisture has reduced, start adding 1 tbsp ghee every 5 mins and keep stirring. When the mixture starts to dry up while stirring, move the mixture to a thali / foil greased with ghee. Also, keep a rolling pin / flat pan greased. This will be used to level the mixture as it has to be done when it is hot. Once the mixture is spread evenly, make cuts using a pizza cutter / knife and leave it to cool. When it is cool, cut the pieces and store in an air-tight container, preferably in the refrigerator.

You have not said whether you grind the almonds, I am assuming you do.can you use ready ground almonds? i will try the recipe and let you know!
