Ingredients used in Balti Baby Chicken in Tamarind Sauce
• Onion seeds( kalonji) - 1/2 teaspoons.
• Curry leaves - 9 tablespoons.
• Corn oil - 5 tablespoons.
• 450 gm baby chicken, skinned and cut into 6 to 8 pieces each - 2 .
• Ground corriander - 1 and 1/2 teaspoons.
• Ground cumin - 1 teaspoons.
• Poppy seeds - 1 teaspoons.
• Sesame seeds - 2 tablespoons.
• Desicated(shreded) coconut - 2 tablespoons.
• Garlic and ginger paste - 3 tablespoons.
• Sugar - 1 tablespoons.
• Salt - 1 and 1/2 teaspoons.
• Chilli powder - 1and1/2 teaspoons.
• Water - 4 tablespoons.
• Tamarind paste - 1 tablespoons.
• Tomato ketchup - 4 tablespoons.
• Dried red chillies - 3 large.
• Fenugreek seeds - 1/2 teaspoons.
• Cherry tomatoes - 10 to 12 .
• Chopped corriander - 3 tablespoons.
• Fresh green chillies ,chopped - 2 .
Method:
1. Put the tomato ketchup, tamarind paste and water into a large mixing bowl and use a fork to blend everything together. 2.Add the chillie powder, salt, suger, ginger and garlic paste,coconut, sesame seeds, ground cumin and ground corriander to the mixture. 3. Add the chicken pieces and stir until they are well coated with the spice mixture. Set to one side. 4.Heat theoil in a deep round-bottomed fring pan(skillet) or a large karahi. Add the curry leaves, onion seeds, dried chillies and fenugreek seeds and fry for about 1 minute. 5. Lower the heat to medium and add the chicken pieces, along with their sauce,2 or 3 pieces at a time, mixing as you go. When all the pieces are in the pan, stir them around well using a slotted spoon. 6. Simmer gently for about 12 to 15 minutes, or until the chicken is thoroughly cooked. 7. Finally, add the cherry tomatoes, fresh corriander and green chillies and serve with fried rice and nan or roti.
