BEAN PLANTAIN TOMATO RICE

Ingredients used in BEAN PLANTAIN TOMATO RICE
• Rice (boiled) - 1 cup.
• Oil - 5 tablespoons.
• Raw plantain - 1 numbers.
• Garlic (finely chopped) - 1 tea spoon.
• Bay leaf - 1 number.
• Onion (chopped) - 1/2 cup.
• Salt - to taste.
• Red chili paste - 1 tea spoon.
• Tomato (chopped) - 1 cup.
• Black eyed beans (boiled) - 1/2 cup.
• Lime juice - 1 tea spoon.
• Spring onions(chopped green portion) - 1 tea spoon.
• Butter (cubes) - 2 number.
• Pepper powder - 1 tea spoon.
Method:
  • Peel and cut the raw plantain into round.
  • Heat oil in a pan, add plantain, shallow fry it and keep aside.
  • Later press it with masher then again fry it in the same oil and keep aside, sprinkle little pepper powder, salt.
  • Heat butter in a pan, add garlic, bay leaf and saute it till raw flavor of ginger is gone.
  • Add finely chopped onions, little salt to it and saute it.
  • To it, add red chili paste, chopped tomatoes and cook it, later add black eyed beans, little salt, rice and saute it. Cook it with closed lid until water is evaporated.
  • Transfer into serving plate and add lime juice, garnish with spring onions, fried raw plantain.

Now the bean plantain tomato rice is ready to serve.
