Ingredients used in Bengali Eggplant Fry
• Mustard oil - 1 to fry.
• Rice flour - 1 pinch.
• Turmeric - 1 pinch.
• Chilli pdr - 1 pinch.
• Salt - 1 pinch.
• Eggplant - 1 numbers.
  1. First cut the eggplan into round.For marination add chilli powder, turmuric, salt mix well, rice flour apply this mixture to cut eggplants and keep aside.
  2. Now take a non stick pan add oil spread over all the pan,now add the coated brinjal and cook on very slow flame both the sides.

you definitely missed one ingredient which is a must in bengali "begun bhaja" ..... thats sugar !!!! and begun bhaja tastes great with puri ... or as the bengali s call it .... "luchi" ......
