Ingredients used in Black and White Cake
• Eggs - 4 large.
• Sugar - 2 1/2 cup.
• (unsalted) butter, softened - 1 cup.
• Boiling water - 2 cup.
• Dutch process cocoa powder - 1 cup.
• Vanilla - 2 teaspoons.
• Baking soda - 2 teaspoons.
• All purpose flour - 2 3/4 cup.
Preheat oven to 350 degrees. Grease 3, 8-or 9-inch pans with shortening and quot;dustquot; with sifted cocoa powder to coat. (About 1/4 cup cocoa powder will be needed for dusting). In large mixer bowl gradually stir water into the 1 cup cocoa powder; cool. Beat in eggs, butter, sugar and vanilla. Add soda, salt and baking powder, then flour, scraping bowl and beating until well combined, 2-3 minutes on medium speed. Divide batter between the prepared pans; bake 25-30 minutes, or until surface springs back when touched lightly. Cool on racks 10 minutes before removing from pans onto waxed paper-covered racks for final cooling. Once cooled, prepare filling. Filling-- Beat cold whipping cream until it holds soft peaks; beat in sugar and vanilla just until holding firm peaks. Spread 1/2 of the mixture between each layer. Chill. Prepare frosting: Combine chocolate, light cream and butter in saucepan; heat over low heat, whisking until smooth. Add confectioner#39;s sugar and mix well with whisk until frosting holds its shape when whisk is removed. Frost the chilled cake on sides and top. Sprinkle with grated chocolate or chocolate curls.
