Ingredients used in Breakfast Burritos
• Olive oil or butter - 1 tablespoons.
• Chopped red -- green -- or yellow bell peppers (capsicum) - 250 ml.
• Chopped green onions (spring onions -- scallions) - 250 ml.
• Garlic -- finely chopped - 3 clove.
• Diced zucchini (courgettes) - 250 ml.
• Canned or frozen corn -- thawed - 125 ml.
• Eggs -- beaten - 6-8 numbers.
• Chopped cilantro - 60 ml.
• Dried oregano - 5 ml.
• Salt & pepper - to taste.
• Cayenne pepper - to taste.
• Flour tortillas - 250 ml.
• Grated mozzarella or cheddar cheese - to taste.
  1. Heat the oil in a large skillet over moderate heat.
  2. Saute the peppers, green onions, and garlic until tender but not brown, about 5 minutes.
  3. Add the zucchini and corn and cook covered for 5 minutes.
  4. Add the eggs, cilantro, oregano, salt, pepper, and optional cayenne.
  5. Cook until eggs are set, stirring occasionally.
  6. Spoon the mixture onto the tortillas and top with the grated cheese.
  7. Fold over one side of the tortilla about 2 inches (5 cm) and roll up, making the folded side the bottom of the tube.
