Brinjal is one of the awesome curries which will be liked by everyone. There are so many recipes can be done with brinjal most famous are Guthivankay, Nune vankay, etc etc. Apart from those this Vankay kothimeera kaaram will be awesome. Give it a try. Ingredients used in Brinjal coriander curry
• Brinjals - 6 numbers.
• Coriander - 1 bunch.
• Green chillies - 6 numbers.
• Tamarind - 1 small.
• Ginger - 1 small.
• Urad dal - 1 tablespoons.
• Asafoetida - 1 pinch.
• Oil - 3 tablespoons.
• Salt - 1 to.
• Turmeric - 1 pinch.
Inorder to start,take a large bunch of coriander leaves and wash it well without any sand. In a mixy jar take coriander leaves,Green Chillies, Small piece of ginger very small not much, and a square of tamarind. Grind it to a fine paste.Cut the brinjals into long pieces. In a pan take some 3 to 4 tsp of oil and add urad dal , Turmeric powder and asafoetida to it. Fry well until the urad dal colour changes and add brinjal pieces to it. By keeping the lid fry the brinjal pieces on a slow flame until they become soft. Then add the coriander paste which we prepared before and fry until the paste coats the brinjals. Add some water if you want as a gravy or else no need. I will generally add water after frying brinjals for some time so that they will become bit softer and we can get some gravy. Add Salt to taste and Let it fry for some time on low flame and serve hot with rice and Ghee. It will give you awesome taste when served hot.
