Ingredients used in BRINJAL KOSTHU
• Coconut - 1 tablespoon.
• Tamarind - little piece.
• Toor dal - 1 tablespoon.
• Chenna dal - 1 tablespoon.
• Coriander seeds - 1 tablespoon.
• Oninon - 1 number.
• Red chillies - 4+3 numbers.
• Eggplant - 5 numbers.
• Salt - to taste.
• Coriander leafs and curryleaves - teaspoons.
• Mustard seeds - 1 tablespoon.
• Turmeric - 1 tea spoon.
  • First fry toordal,chennadal,3 redchillies and coconut without oil. Use blender to make a fine powder. Keep this a side.
  • First fry red chilles then add the chopped onion fry up to gloden brown color. In the another pan fry the chopped eggplant with little oil up to slightly cooked.
  • Then put the fried redchillies, chopped onions salt and a little tamarind in a blender make it a paste after that add the fried eggplant.
  • Take the another pan fry the mustard seeds and add the paste in the pan add little water and turmeric powder . cooked for 10 minutes then add the power which we make first and cook for 5 minutes.
  • Then add corinder leaves and curry leaves.
