Ingredients used in Brinjal with Coriander Masala
• Oil - 3-4 tablespoons.
• Salt - to taste.
• Chilly powder (optional) - 1 teaspoons.
• Ginger - 1 teaspoons.
• Green chills (depends on the your taste) - 8-9 numbers.
• Jeera - 1 teaspoons.
• Coriander - 1 big bunch.
• Brinjal - 500 grams.
• Channa dal - 1 teaspoons.
• Udda dal - 1 teaspoons.
• Turmatic - pinch.
• Mustured seeds - 1 teaspoons.
Method:
Make a Paste of Coriander leaves, Chilly and put it a side. Cut Brinjal into long pieces and let them be in water as they will turn black and bitter. Take a pan add 3-4 table spoons of oil. Add whole of Musterd Seeds, Jeera, Channa Dal, UddaDal ,and Tumaric Powder. Once they are fried,putginger and brinjal pieces which are in water, see that water does not fall into the pan. Add Salt to Taste and put the lid. Once brijal is almost cooked put the whole Coriander and Chilly Paste masala which we put aside in the starting. If you want a bit spicy, you can add littleRed Chilly Powder. Once Brinjal is cooked GArnish with Coriander leaves Serve with Rice.
