Ingredients used in Brinji(vegetable Pulav)
• Cardomom & cloves (each) - 10 + 10 numbers.
• Beans and carrots (each) - 50 + 50 grams.
• Potato and peas (each) - 100 + 100 grams.
• Cauliflower - 200 grams.
• Mint leaves - 1 small bunch.
• Coriander leaves - 1 small bunch.
• Garlic - 15 piece.
• Ginger - 1 inch piece.
• Green chillies - 15 piece.
• Onion - 100 grams.
• Coconut - 1 numbers.
• Biriyani rice - 4 cup.
• Masala leaf - 2 numbers.
• Cinnamon - 1 numbers.
• Kesari powder or orange colouring - 1/4 teaspoons.
• Dalda and oil (each) - 100 + 100 grams.
• Salt - to taste.
Method:
Soak Rice in water for half an hour. Cut the vegetables into small pieces. Grind the Onion and greeen chillies roughly. It should not become a paste. Grind ginger, garlic and cinnamon into a smooth paste. Take coconut milk from coconut. Heat oil and dalda in a deep saucepan or a deep dish pressure pan. Put the masala pieces and after a few minutes add the ground ginger garlic paste. After the raw smell goes add the ground onion and chillies mix. Add the cut corriander and Pudina(MInt) leaves. After a good smell comes add the cut vegetables and then add the kesari powder. Then add the coconut milk and required amount of water and salt. When the water begins to boil add the rice and salt. After the rice is done add 100 gms cashewnuts fried in ghee. Serve hot.
