Ingredients used in Carrot Jalapeno sabji
• Oil - 3 tablespoons.
• Asafoetida - 1 pinch.
• Salt - to taste .
• Mustard seeds - 1 teaspoons.
• Cumin seeds - 1 teaspoons.
• Garlic - 1 to 2 clove.
• Onion - 1 cup.
• Jalapeno - 3 numbers.
• Carrots - 4 to 5 numbers.
• Lime juice - to taste .
• Coriander - for garnish .
Method:
Cut onions to medium size pieces. Slice jalapeno into half, then cut each half into small slices, around 1/4 inch slice. Grate the carrots. Heat oil in a pan. Add crushed garlic cloves to oil. Add mustard and cumin seeds when oil is hot. When mustard seeds splutter, add the chopped onions to the oil. Add asafoetida (heeng) and salt to this. When the onions are light golden brown, add jalapeno, and fry for around 1 minute. Finally add grated carrots and stir this. Cook for 2-3 minutes. Add a few drops of lime juice and garnish with coriander leaves
