Ingredients used in chandrakala
• Saffron - few numbers.
• Sugar - 1/2 cup.
• Khoya - 3/4 cup.
• Ghee - 11/2 cup.
• Salt - 1 pinch.
• Flour - 1 cup.
Method:
1. Sieve flour and salt together. Rub in ghee and knead into a firm dough using water as required. Cover and keep aside. 2. Place khoya in a thick-bottomed pan. Cook on low heat for three to four minutes. Add castor sugar and green cardamom powder and remove from heat. Let it cool. 3. Cook sugar with five cups of water to make a sugar syrup of one-thread consistency. Add saffron to it. Keep it aside. 4. Divide dough into twenty equal parts. Roll out two parts into puris. Place one tablespoon of khoya filling in the centre of one puri and cover with the other puri. Wet the edges and seal firmly. Prepare more chandrakalas in the same way. 5. Heat sufficient ghee in a kadai and deep-fry chandrakalas on medium heat till golden brown. Drain away excess ghee and soak immediately in hot syrup. 6. When it is coated on all sides with sugar syrup, gently remove and serve.
