Ingredients of Cheera Thoran

Red spinach(Cheera)  800 Grams
Potatoes  200 Grams
Grated coconut  90 Grams
Coconut oil  2 Tablespoons
Mustard seeds  1 Teaspoons
Black gram(Uzhunnuparippu)  1 Teaspoons
Onion(sliced)  1 Numbers
Curry leaves  12 Numbers
Ginger  1 Numbers
Green chillies  6 Numbers
Salt   To Taste


Directions
1)Parboil the potatoes with salt to taste. Drain and keep aside.

2)Heat oil in a pan.

3)Add mustard seeds and when they splutter, add black gram and stir until light golden.

4)Add onions and sauteacute; until translucent and glossy.

5)Add ginger and green chillies and stir for a few seconds.

6)Add curry leaves and stir well.

7)Add spinach and stir-fry till almost dry.

8)Add potatoes and stir-fry till done and dry.

9)Add the grated coconut and stir for a minute. Remove from heat.
