Wash the thin slice of chicken breast. This piece should be thin enough so that it could be rolled. Marinate with just salt, black pepper powder, lemon.
Cook vegetables - potato, brocolli and any other veggies u like in microwave / on gas.
Mash all veggies together. Add salt and pepper to it.
Take a baking dish, spread the marinate chicken on it, Line a 1.5 cm thick mixture of the mashed veggies n thinner side of the chicken spread. Roll chicken breast along with the lined up veggies ( this is almost like sushi rolls).
Coat the outer chicken surface with flavored bread crumbs.
Cook the whole thing in oven at 425 deg( preheated) for 8-10 mins.
take it out and cut in thin slices and its ready to eat.
Kids love it .
We can add more veggies or we can also put in indian style chopped green chillies or masala to make it more hot and spicy for adults.
