Ingredients used in CHICKEN VERONIQUE
• Dried bread crumbs - 3 tablespoons.
• Tarragon - 1/2 teaspoons.
• Dash nutmeg - to taste.
• Whole chicken breasts, skinned and - 2 numbers.
• Margarine - 2 tablespoons.
• Onion, diced - 1 small.
• Mushrooms, sliced - 1/4 lbs.
• Dry white wine - 2 tablespoons.
• Chicken bouillon cube - 1 numbers.
• Seedless green grapes - 1 cup.
Mix bread crumbs, tarragon, pepper, nutmeg. Dip chicken in crumb mixture. In skillet heat margarine - cook chicken until golden brown (about 5 minutes). Add onion, mushrooms, wine, bouillon, and 2 tablespoons water. Heat to boiling; reduce heat to low, cover and simmer 10 minutes. Add grapes and cook 5 minutes. Serve with rice if desired.
