Ingredients used in Country Captain Chicken
• Garlic - cut into julliens - 10 clove.
• 2 inch ginger - cut into julliens - 1 numbers.
• Onion - cuit into slices - 8 numbers.
• Turmeric - 1/2 teaspoons.
• Jeera - 1 teaspoons.
• Corriender seeds whole - 1 teaspoons.
• Red chillies - 8 numbers.
• Chicken - cut bite size pcs - 1 numbers.
• Green chillies - cut into julliens - 4 numbers.
• Tomatoes - chopped - 500 grams.
• Fresh corriender - chopped - 1/2 cup.
• Oil/ghee - 2 tablespoons.
• Sugar - 1 tablespoons.
Method:
Paste - Make a fine paste of red chillies, corrieder seeds, jeera and turmeric - alternatively you can use powders - but the taste of fresh ground red chillies is best. Heat 1 tblsp oil, add 1 tblsp sugar. Fry chicken pieces until golden brown. Remove chicken pcs aside and keep warm. Now add the 1 tblsp of oil more, add the cut onions ginger, garlic and chillies. Fry well. Then add the chopped tomatoes and ground masala - fry well. Now add the chicken pcs back to the pot, add salt, about a cup of water. Cover and let chicken cook on med to low flame for about 10 to 15 mins. Now add fresh corriender. Taste for seasoning. Enjoy!
