Ingredients used in Easy Gutthi Vankaya
• Curry leaves - 1 springs.
• Onion - 1 numbers.
• Oil - to fry.
• Cumin & coriander powder - 2 tablespoons.
• Green chillies - 8 numbers.
• Ginger - 1 large.
• Garlic - 1 big.
• Eggplant - 10 numbers.
• Cilantro - 5 springs.
• Salt - 1 tablespoons.
• Turmeric powder - pinch.
Method:
For Stuffing: Take ginger, garlic, green chillies and cumin amp; coriander powder and make a paste in a blender (do not add water). Cut the eggplants in the middle on all sides. Then stuff the paste in eggplants in such a way that the paste doesn#39;t come out of the eggplant. Heat oil in a pan and add all the eggplants and fry them until they are golden brown (for 10 minutes approx.). Take another pan and heat 2 tbsp of oil and add chopped onions, curry leaves and turmeric powder and cook them till they are golden brown. Then add the fried egg plants and cook them for 5 minutes. Garnish them with chopped cilantro and enjoy!
