Ingredients used in Egg Bhurji
• Eggs - 2 numbers.
• Thinly sliced onions - 2 numbers.
• Finely chopped chillies - 2 numbers.
• Cumin seeds - 1/2 teaspoons.
• Mustard seeds - 1/2 teaspoons.
• Oil - 2 tablespoons.
• Salt - to taste.
• Coriander leaves - 1 bunch.
• Finely chopped tomato - 1 numbers.
• Crushed peppercorns - 1/2 teaspoons.
Method:
1.Heat a Pan (preferably heavy bottomed for uniform heat distribution) 2.Crackle the mustard and cumin seeds. 3.Add the Chilies and saute. 4.Saute the Onions till soft. 5.Add the Tomatoes and cook till you get a thick sauce. 6.Add salt to Taste 7.Reduce the flame and slowly add the eggs. 8.Add the Cracked Peppercorns and on low heat , stir continuously. 9.After some time when the eggs are partially cooked add some chopped coriander leaves 10.Wait for the eggs to cook slowly and check for salt. 11. Garnish with Coriander leaves and toss before you serve.
