Ingredients used in egg plant fry
• Oil - 3 tablespoons.
• Salt - to taste.
• Coconut grated - 2 cup.
• Cumin seeds - 2 tablespoons.
• Green chillies (depends on the heat of chili) - 2 numbers.
• Ginger - 1 piece.
• Egg plant (indian) - 6 numbers.
Method:
For the gravy blend coconut,green chillies,ginger,cumin seeds together with some salt and keep it a side. slit the egg palnt into four pieces with the stalks intact. Heat oil in a nonstick pan keep it in a low flame add egg plants add some salt and close the pan untill they become soft but not mushy and then add the above mixture fry untill the raw taste of mixture goes. make sure you prepare this curry in a slow flame. this goes well with rasam or sambar.
