Ingredients used in Fried Vegetables
• Chopped onion - 1/2 cup.
• Diced spring onions - 1/2 cup.
• Finely sliced capsicum - 1/4 cup.
• Mushrooms( cut into four pieces) - 1/4 cup.
• Finely sliced carrots - 1/4 cup.
• Cauliflower( cut into florets) - 1/4 cup.
• French beans(finely chopped) - 1/4 cup.
• Potatoes(finely chopped) - 1/4 cup.
• Ajinomoto - pinch.
• Corn flour - 1/4 cup.
• Chopped red chilies - 4 number.
• Oil - as required.
• Salt - to taste.
Method:
  • Mix all the vegetables in a bowl, sprinkle water and add dry corn flour to it. Keep aside for 15-20 minutes.
  • Heat oil in a wide pan till it smokes and fry all the vegetables. Drain out the excess oil from the vegetables on a paper and keep aside.
  • Heat 30 ml oil in the same pan and fry the red chilies, green chilies and spring onions for a few seconds.
  • Add these to the fried vegetables and toss to mix.
  • Sprinkle ajinomoto, salt and toss again to mix.

Serve it hot.
