Ingredients used in Fruit Cake cookies
• Vanilla extract - 1 tablespoons.
• Egg - 1 large.
• Kosher salt - 1 pinch.
• Lemon juice - 1 tablespoons.
• Cinnamon (powder) - 1 teaspoons.
• Cloves (fine powder) - 1 tablespoons.
• Nutmeg (powder) - 1 teaspoons.
• Cashew nut pieces, walnuts (each) - 1/2 cup.
• Apricots,figs,tutti fruity, candied cherry (1/2 cup each) - 1/2 cup.
• Light brown sugar (packed) - 1/3 cup.
• Fine baking sugar - 1/2 cup.
• Butter - 1,3/4 stricks.
• All purpose flour - 2 cup.
• Dry sherry - 1/4 cup.
• Brandy - 1/4 cup.
• Parchment sheets - 9x13 measure - 2 numbers.
Method:
Preparation: Dry Fruit Mixture: Take a big plastic bowl (No metal or steel to be used) and mix all the dry fruits. Cut the figs and apricots in thin long slices and mix it with the nuts as well. Fine chop the walnuts. Pour the sherry and brandy and mix it well, Add a pinch of kosher salt and 1 Tbsp lemon juice and stir it well. Keep this mixture for 24 hours. Cookie base: Dry Ingredients: Mix flour, cloves powder, cinnamon, nutmeg a pinch of salt and keep it aside. Wet Ingredients: Using an electric mixer Cream the butter with white sugar and brown sugar (3 minutes) . (The sugar can be adjusted to either make sweeter or savoury taste) Do not over mix the butter this will result in soft cookies. Add egg slowly with the mixer still on finally add the vanilla essence and give it a final whip and with the mixer still on slow speed add the flour mixture and let it mix till it just about comes together. Its becomes like a soft dough. Add the dry fruit and any liquid in it and turn of the mixer and fold the dry fruits into the dough. Make two portions of the dough take the parchment sheets one by one and put this dough in the middle of the paper long ways. Roll the sheet to form a long tube and refrigerate for atleast 6 hours. This dough can be kept for two weeks and baked. Baking time: Once the dough is set after 6 hours take the dough out of the parchment and without touching it too much with hands (The hand heat will melt the butter and this will result in crumbly cookies) cut into rounds about 1 and half inch thick. Pre- heat oven at 350 degrees and put these cookies in and bake for about 15 to 20 minutes or until they slightly start to brown. Do not let the cookies be dark brown they will taste nasty. :)
