GONGURA RICE

Ingredients used in GONGURA RICE
• Gongura (sorrel leaves) - 5 bunch.
• Salt - to taste.
• Oil - as required.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Red chilli - 3 numbers.
• Chana dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Cashew nuts - 10 numbers.
• Hing - 1 pinch.
• Green chilli - 3 numbers.
• Onions (sliced) - 1 number.
• Coconut (grated) - 1/4 cup.
• Methi seeds - 1/2 tea spoon.
• Turmeric - 1/2 tea spoon.
• Curry leaves - 1 springs.
• Cooked rice - 2 cups.
Method:
  • Heat oil in a pan and add methi seeds, sorrel leaves, salt, mix it and cook till Gongora leaves are tender and cooked.
  • Let it cool down make it into a smooth paste.
  • In the same pan heat oil and add mustard seeds, cumin seeds, red chili, chana dal, mix it.
  • Then add urad dal, cashew nuts, hing, green chili, sliced onions, salt, turmeric powder, curry leaves, saute it for 2 minutes then add Gongora paste, saute it for a minute and add cooked rice mix it well.
  • Finally add freshly grated coconut mix it well. Serve hot.
