This rice preparation is classic fried rice, bright in colors, springing out with pleasant mildly spiced, sweet tropical flavors. The base is a mix of cashew nuts, almonds, few onions nicely sautéed added with few finely chopped colorful bell peppers, salt to taste, minced green chillies to give that spicy punch, diced pineapple pieces flavored with mustard paste, fresh grated coconut and few sprigs of mint and coriander leaves all mixed together.
This is then slightly stir fried to bring out an amalgamation of exciting flavors and then added in with cooked rice and fried until the essence are fused and blended into the rice.
