Ingredients used in Healthy Pineapple And Coconut Rice - Be Fit Be Cool AAPI
• Cashew nuts - 10 grams.
• Almonds - 10 grams.
• Onion (chopped) - 1 large.
• Bell peppers (all three) - 2 tablespoons.
• Green chilies (finely chopped) - 1 tablespoons.
• Salt - . to taste.
• Pineapple (diced) - 1 cup.
• Mustard paste - 1 tablespoons.
• Fresh coconut (grated) - 1/2 cup.
• Mint leaves - 2 teaspoons.
• Coriander leaves - 2 teaspoons.
• Rice (boiled) - 2 cup.
Method:
1.In a pan, add cashew nuts, almonds, chopped onions, bell peppers, green chilies and cook till the onions are transparent.
2.Add salt and pineapple dices and cook for few seconds
3.Add mustard paste, grated coconut and mix well.
4.Finally add mint leaves, coriander, rice and mix well.
5.Serve it hot.

Making a simple yet delicious and appetizing meal is not tiring task to do. With little amount of effort, passion and using the right amount of ingredients without oil, you can absolutely make a special treat to the taste buds bursting with enticing flavors and just few ingredients to add in. As part of my quest to promote the AAPI“Be Fit. Be Cool” campaign, here I am showing you all a very healthy and nutritious rice preparation made with tropical flavors, nuts,  few exotic veggies and flavoring herbs in making the dish just mouth-watering and stomach filling.

 

This rice preparation is classic fried rice, bright in colors, springing out with pleasant mildly spiced, sweet tropical flavors. This is a fat free dish and can be eaten by itself without any side dish.  The base is a mix of cashew nuts, almonds, few onions nicely sautéed added with few finely chopped colorful bell peppers, salt to taste, minced green chillies to give that spicy punch, diced pineapple pieces flavored with mustard paste, fresh grated coconut and few sprigs of mint and coriander leaves all mixed together.

 

This is then slightly stir fried to bring out an amalgamation of exciting flavors and then added in with cooked rice and fried until the essence are fused and blended into the rice. A fantastic healthy, nutritious, fat-free dish that is to be served piping hot! Pineapple fried rice is actually a signature Thai dish. What else would one ask for if you could make this incredible dish with attractive colors, tantalizing flavors, and creating an explosion of incredible taste in every bite you eat right in your home in achieving the quality of a restaurant type of fried rice will surely thrill and delight your family and friends asking for more to eat.

 

Pineapple and coconut flavors blends well together and grilled pineapple and coconut makes an amazing dish for a sweet and exotic barbecue dish. To enjoy refreshing tropical taste add in some sweet pineapple and rich coconut cream blended together makes an exotic and irresistible smoothie to drink. Pineapple as such is sweet, tangy and for sure a super food fruit and has a fair amount of nutritional benefits which includes boosting the immune system. This fruit is packed with good amount of fiber to help digestion and vitamin C to boost immune system. It is said that one cup of diced pineapple is only 77 calories, isn’t it good! Because of its high sugar content, do not eat the entire pineapple in one sitting.

 

Pineapple is also known for its anti-inflammatory benefits. Bromelain, an enzyme found in this juice and stem of pineapples has been used medicinally since ancient time to help reduce inflammation etc. Coconut is another popular and widely used ingredient in southern Indian. Coconut adds flavor to a variety of foods as soups, curries, seafood dishes, bakery products and thus supplies key vitamins and minerals. Coconut is also a good source of iron.

 

Tip: Remember to limit and use small amounts of shredded coconut to enhance the flavor of foods which will reduce the overall fat, calorie and sugar content in the food. Bell peppers are delicious, exotic and colorful vegetables that be eaten either raw or cooked. When served raw in a salad, they have an amazing crispy and crunchy texture. They are also perfect complement to dips. Bell peppers contain very high amounts of vitamins A and C. They also contain significant amounts of vitamin B6 and dietary fibre.

 

They are low in calories and high in antioxidants. Mustard paste, nowadays has become a very versatile ingredient in various culinary uses. Mustard has a vast health advantages and nutritional benefits in its kitty. They are nutrient dense with selenium, high in antioxidants and known to have anti-inflammatory properties. They also have antiseptic as well as anti-fungal properties making them very useful for purging the digestive system and increasing the body’s natural defence system. With all these brilliant nutritional benefits, this dish thus becomes an enriching and appetizing food that you must try eating and feeding your family and friends.
